Loaded potato skins topped with gooey cheddar cheese, crispy bacon, and fresh green onions, perfect for sharing or enjoying alone.

Ingredients

  • 4 medium russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, sliced
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Clean the potatoes under running water and poke them with a fork; rub them with olive oil, salt, and pepper.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes or until fork-tender.
  4. Scoop out some of the flesh after allowing the potatoes to cool slightly.
  5. Crisp up the skins by brushing insides with olive oil, seasoning, and returning them to the oven for 10-15 minutes.
  6. Fill crispy skins with shredded cheddar cheese and crumbled bacon, then bake until cheese is melted, about 5-7 minutes.
  7. Top with sour cream and sliced green onions before serving.

Notes

Feel free to add other toppings like jalapeños or pico de gallo for extra flavor.
