1 cup all-purpose flour
1/2 cup unsalted butter, browned
1/4 cup powdered sugar
1/4 teaspoon salt
2 large eggs
1 cup granulated sugar
1/2 cup freshly squeezed lemon juice
1 tablespoon lemon zest
1/4 cup strawberry puree
1/4 cup additional powdered sugar (for glaze)
Instructions
Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish to prepare for your scrumptious creation.
Create the crust by mixing the browned butter, flour, powdered sugar, and salt in a bowl. Press this mixture firmly into the bottom of the prepared baking dish.
Bake for about 15 minutes or until the crust is lightly golden.
Whisk together the eggs, granulated sugar, lemon juice, and lemon zest until smooth in another bowl.
Pour the lemon mixture over the baked crust and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set.
Allow the bars to cool at room temperature, then transfer them to the refrigerator to chill.
Mix the strawberry puree with powdered sugar until smooth for the glaze.
Pour the strawberry glaze over the chilled lemon bars, slice into squares, and serve!
Notes
Store in an airtight container in the refrigerator for up to a week. They freeze well too!
