Delightful Lemon Poppy Seed Muffins bursting with citrus goodness and a satisfying crunch from poppy seeds, perfect for breakfast or a midday snack.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup poppy seeds
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, salt, and poppy seeds in a large bowl.
  3. Mix the milk, vegetable oil, eggs, lemon zest, and lemon juice in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.

Notes

These muffins can be stored in an airtight container for up to 2 days at room temperature or kept in the fridge for a week. They can also be frozen for up to 3 months.
