  • 1 pre-baked pie crust
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks, beaten
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 2 tablespoons butter
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the sugar, cornstarch, and salt in a saucepan.
  3. Cook the mixture over medium heat until it thickens and bubbles.
  4. Stir a small amount of the hot mixture into the beaten egg yolks.
  5. Add the lemon juice, lemon zest, and butter into the saucepan.
  6. Beat the egg whites and cream of tartar together until soft peaks form.
  7. Spread the meringue over the lemon filling.
  8. Bake for 10-15 minutes or until the meringue is golden brown.
  9. Let the pie cool at room temperature before slicing.
