  • 1 cup white chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup sugar
  • 1 tablespoon all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C). Grease ramekins with butter and dust them with flour.
  2. In a saucepan, melt the butter and white chocolate over low heat. Stir until smooth.
  3. In a bowl, whisk together the eggs, egg yolks, and sugar until pale and fluffy.
  4. Stir in the melted chocolate mixture until combined.
  5. Add the flour, lemon juice, lemon zest, and a pinch of salt. Mix until smooth.
  6. Divide the batter among the prepared ramekins and place them on a baking sheet.
  7. Bake for about 12 minutes, until the edges are firm but the center is soft.
  8. Let cool for 1 minute, then carefully invert onto plates to serve.
