  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the orzo pasta according to package instructions. Once al dente, drain it and set aside.
  2. Heat olive oil over medium heat in a large skillet. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Increase the heat to medium-high and add the shrimp. Cook until they are pink and opaque, about 2-3 minutes per side.
  4. Stir in the cooked orzo, lemon juice, lemon zest, and Parmesan cheese. Mix well and season with salt and pepper to taste.
  5. Remove from heat and garnish with chopped parsley. Serve warm.
