  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) to get it nice and warm while you prepare your dough.
  2. Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  3. Beat in the large egg, along with the lemon juice and zest.
  4. Whisk together the all-purpose flour, baking powder, and salt. Slowly add these dry ingredients to your wet mixture, stirring just until combined.
  5. Drop generous spoonfuls of cookie dough onto ungreased baking sheets, spacing them apart.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges turn lightly golden.
  7. Cool the cookies on baking sheets before transferring them to a wire rack. Dust with powdered sugar once cooled.

Notes

For an added lemon kick, consider adding a teaspoon of lemon extract to the dough.
