  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons maple syrup (or honey)
  • Juice and zest of 1 lemon
  • 1/2 teaspoon vanilla extract
  • Fresh fruit for topping (optional)

Instructions

  1. In a mixing bowl, combine chia seeds, almond milk, maple syrup, lemon juice, lemon zest, and vanilla extract.
  2. Whisk well to combine and break up any clumps of chia seeds.
  3. Allow the mixture to sit for about 10 minutes, then whisk again to prevent the seeds from settling.
  4. Cover the bowl or transfer to individual jars and refrigerate for at least 240 minutes or overnight until it thickens.
  5. Serve chilled, topped with fresh fruit if desired.

Notes

Whisk the mixture well to avoid clumps of chia seeds. Let it sit for a little while and whisk again to keep the chia seeds evenly distributed. Experiment with different types of milk or sweeteners to suit your taste.
