Lemon Brownies

Deliciously chewy lemon brownies with bursts of citrus and rich white chocolate.

Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • 1 cup white chocolate chips
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. Melt the butter in a large bowl until completely liquid. Mix in the granulated sugar until combined.
  3. Add the eggs one at a time, stirring well after each addition. Then mix in the vanilla extract, lemon zest, and fresh lemon juice.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the white chocolate chips until evenly distributed.
  7. Pour the batter into the prepared baking pan and spread it out evenly. Bake in the oven for 20-25 minutes.
  8. Prepare the glaze by mixing the powdered sugar with 2-3 tablespoons of fresh lemon juice.
  9. Allow the brownies to cool for 10 minutes, then drizzle the glaze over the top.

Notes

Serve with whipped cream or vanilla ice cream. Store covered at room temperature for up to 2-3 days.
