Delicious and healthy protein bites made with cottage cheese, blueberries, and a hint of lemon, perfect for a quick snack or breakfast on the go.

Ingredients

  • 1 cup cottage cheese (preferably low-fat)
  • 1 cup fresh blueberries, plus extra for garnish
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Blend cottage cheese in a high-speed blender until completely smooth.
  2. Transfer the blended cottage cheese to a mixing bowl. Add almond flour, lemon zest, honey, vanilla extract, and salt. Mix thoroughly.
  3. Fold in fresh blueberries gently to avoid crushing them.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  5. Remove the mixture from the refrigerator. Roll portions into balls using a cookie scoop or spoon.
  6. Place the formed bites on a baking sheet and refrigerate for 1-2 hours until firm.

Notes

These bites can be stored in the refrigerator for up to a week or frozen for up to two months. Adjust sweetness as desired.
