  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 1/2 cup powdered sugar (for glazing, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs, lemon juice, and lemon zest until well combined.
  4. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add this to the wet mixture until fully incorporated.
  5. Fold in the blueberries gently.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Cool slightly before transferring to wire racks. Optional: drizzle with a mixture of powdered sugar and lemon juice for glazing.

Notes

Use fresh blueberries for best results. Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
