A delightful and refreshing treat that combines zesty lemons with sweet blueberries, perfect for breakfast or dessert.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar in another bowl until light and fluffy.
  4. Beat in the eggs, vanilla, lemon zest, and lemon juice.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture until just combined.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with whipped cream or lemon glaze for an extra treat. Can be stored in an airtight container for up to 4 days.
