  • 1/2 cup buttermilk
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven and prepare the pan: Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the dry ingredients: In a bowl, combine the flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar: In another bowl, cream together the sugar and softened butter until light and fluffy. Add the egg, vanilla extract, buttermilk, lemon juice, and lemon zest, and mix well.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in the blueberries gently.
  5. Pour the batter: Pour the batter into the prepared loaf pan, filling it about three-quarters full.
  6. Bake to perfection: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool before serving: Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.
