A delightful blend of tangy lemon filling with fresh blueberries on a buttery crust, perfect for sunny days.

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour (for filling)
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan to prepare for the crust.
  2. Cream the butter and 1/2 cup sugar until light and fluffy.
  3. Add 2 cups of flour and salt to the butter mixture and mix until just combined.
  4. Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
  5. Bake the crust for 15-20 minutes, or until lightly golden.
  6. Whisk together 1 cup sugar, 3 eggs, lemon juice, lemon zest, 1/4 cup flour, and baking powder until smooth.
  7. Fold in the fresh blueberries gently.
  8. Pour the lemon mixture over the baked crust, spreading it evenly.
  9. Bake for an additional 20-25 minutes, or until set and slightly golden.
  10. Cool in the pan before cutting into squares.

Notes

For a sweeter treat, dust with powdered sugar or drizzle with a lemon glaze. Store in an airtight container in the refrigerator for up to one week.
