A delightful balance of tart and sweet, these lemon bars evoke nostalgia with each bite, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Mix together the flour and powdered sugar.
  3. Cut in softened butter until crumbly.
  4. Press the mixture firmly into the bottom of the baking dish.
  5. Bake the crust for 15-20 minutes until lightly golden.
  6. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder.
  7. Pour the lemon mixture over the baked crust evenly.
  8. Return to the oven and bake for 20-25 minutes until set.
  9. Allow to cool before dusting generously with powdered sugar.

Notes
