Delightfully tangy and sweet, these lemon bars feature a buttery crust and silky filling that evokes nostalgia and joy.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Combine the flour and 1/2 cup of powdered sugar in a bowl. Add the softened butter and mix until crumbly.
  3. Press this mixture into the bottom of the prepared pan.
  4. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  5. Pour this filling over the crust.
  6. Bake for 20-25 minutes until set and lightly golden.
  7. Allow to cool completely and dust with powdered sugar before cutting into squares.

Notes

For a twist, try adding lavender or using lime juice instead of lemon.
