A flavorful and comforting Lamb Curry made with tender lamb and a rich blend of spices and coconut milk.

Ingredients

  • 2 lbs lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 can coconut milk
  • Salt, to taste
  • Fresh cilantro, for garnish
  • 2 tablespoons oil

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic and ginger and cook for another minute.
  4. Add the lamb cubes and brown on all sides.
  5. Mix in the chopped tomatoes, curry powder, cumin, coriander, and turmeric.
  6. Pour in the coconut milk and bring to a simmer.
  7. Cover and cook on low heat for about 90 minutes, or until the lamb is tender.
  8. Season with salt to taste.
  9. Garnish with fresh cilantro before serving. Serve hot with rice or naan.

Notes

The curry tastes even better the next day, so consider making it ahead of time for gatherings.
