A classic refreshing dessert with tangy key lime flavor and a sweet crust, perfect for warm days.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 tablespoon lime zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl; mix well.
  3. Press the mixture into the bottom and up the sides of a pie pan.
  4. Bake for 8-10 minutes.
  5. Whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth in another bowl.
  6. Pour the filling into the cooled crust.
  7. Bake for another 15 minutes or until the filling is set.
  8. Allow to cool, then refrigerate for at least 3 hours.
  9. Beat the heavy cream with powdered sugar until stiff peaks form.
  10. Spread over the chilled pie before serving.

Notes

For the best flavor, use fresh key limes. Adjust sweetness of the cream to taste.
