A delightful key lime pie with a buttery graham cracker crust, capturing the perfect balance of tart and sweet.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt
  • Whipped cream for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until the mixture resembles wet sand.
  3. Press the mixture into the bottom and sides of a pie dish.
  4. Bake for 8-10 minutes until golden.
  5. Whisk together egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt until smooth.
  6. Pour the filling into the pre-baked crust, smoothing the top.
  7. Bake again for 15 minutes until the filling is set.
  8. Cool completely at room temperature, then refrigerate for at least 2 hours.
  9. Serve with whipped cream if desired.

Notes

For a coconut twist, replace half the graham cracker crumbs with toasted coconut flakes. Use regular limes if key limes aren’t available.
