A refreshing and tangy dessert featuring a creamy key lime filling over a crunchy graham cracker crust, perfect for summer gatherings.

Ingredients

  • 15 sheets graham crackers
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons sugar
  • Pinch of salt
  • 6 ounces cream cheese, at room temperature
  • 14 ounces sweetened condensed milk
  • 4 egg yolks
  • ½ cup key lime juice (or regular lime juice)
  • 1 tablespoon lime zest

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. Crush the graham crackers into fine crumbs and combine with melted butter, sugar, and salt. Press into the pan and bake for 10 minutes.
  3. Beat the cream cheese in a bowl until smooth. Gradually mix in the sweetened condensed milk.
  4. Add the egg yolks one at a time, mixing thoroughly, then stir in lime juice and zest.
  5. Pour the filling over the crust and return to the oven for 15-18 minutes or until set.
  6. Cool at room temperature, then chill in the refrigerator for at least 2 hours before serving.

Notes

For extra tang, use key limes when available. Serve with whipped cream or a drizzle of coconut cream for an elegant touch.
