A refreshing balance of tangy and sweet, this Key Lime Pie is the perfect summer dessert with a creamy filling and buttery graham cracker crust.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • â…“ cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ¾ cup key lime juice
  • 1 tablespoon grated lime zest
  • ¼ teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Lime slices for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a large bowl.
  3. Press this mixture firmly into the bottom of a 9-inch pie pan.
  4. Bake for 8-10 minutes or until lightly browned.
  5. Whisk together the egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt until smooth.
  6. Pour the filling into the cooled crust and return it to the oven.
  7. Bake for another 15 minutes until set with a slight jiggle in the center.
  8. Let it cool to room temperature and then refrigerate for at least 3 hours.
  9. Whip the heavy cream and powdered sugar until soft peaks form.
  10. Spread the whipped cream over the chilled pie and garnish with lime slices.

Notes

For best flavor, use fresh key lime juice. If using regular limes, adjust to taste.
