A refreshing and creamy dessert featuring tart key limes and a crunchy graham cracker crust.

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 cup key lime juice
  • 4 large eggs
  • 1 tablespoon grated lime zest

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the graham cracker crumbs, 1/2 cup sugar, and melted butter.
  3. Press this mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat the cream cheese until it is smooth.
  5. Gradually add 1 cup sugar, and beat until well combined.
  6. Add the key lime juice and lime zest, mixing until the mixture is smooth.
  7. Add the eggs one at a time, mixing on low speed until just combined.
  8. Pour the cream cheese mixture over the crust in the springform pan.
  9. Bake in the preheated oven for about 50 minutes or until the center is set.
  10. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  11. Remove from the oven and refrigerate for at least 4 hours before serving.

Notes

Serve chilled and topped with whipped cream or fresh berries for an appealing presentation.
