  • 1/2 cup butter, softened
  • 1/2 cup sweetener (like erythritol or stevia)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sweetener until light and fluffy.
  3. Add in the eggs and vanilla extract, mixing until well combined.
  4. Whisk together the coconut flour, baking soda, and salt in another bowl.
  5. Combine the dry ingredients with the wet ingredients, mixing until a dough forms.
  6. Scoop out tablespoons of dough and place them on a lined baking sheet.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Allow to cool before serving.
