  • 1/2 cup butter, softened
  • 1/2 cup erythritol or your preferred sweetener
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and erythritol until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the coconut flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, combining until a dough forms.
  5. Scoop tablespoon-sized portions of dough onto a lined baking sheet.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 15-18 minutes or until the edges are golden.
  8. Allow to cool before serving.
