  • 1/2 cup granulated erythritol or other keto-friendly sweetener
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and erythritol until light and fluffy.
  3. Incorporate the eggs one at a time, stirring in the vanilla extract.
  4. Mix together the coconut flour, baking soda, and salt in another bowl.
  5. Combine the dry ingredients with the wet mixture until well mixed.
  6. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  7. Flatten each cookie slightly with the back of a spoon.
  8. Bake for 12-15 minutes, or until lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
