A delightful twist on classic meatballs, these Juicy Baked Chicken Kofta Meatballs are easy to prepare and bursting with fresh flavors and aromatic spices.

Ingredients

  • 1 lb ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1/2 cup breadcrumbs (optional)
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, onion, garlic, parsley, cilantro, cumin, coriander, paprika, salt, black pepper, egg, and breadcrumbs if using. Mix until well combined.
  3. Shape the mixture into meatballs, about the size of a golf ball.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Drizzle with olive oil.
  6. Bake for 20-25 minutes, or until cooked through and golden brown.
  7. Serve the kofta meatballs with rice, pita, or yogurt sauce.

Notes

Leftover meatballs can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in a preheated oven at 350°F (175°C).
