  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • ½ cup beef or chicken broth
  • Fresh parsley, chopped (optional)
  • Thinly sliced fresh apples (optional)

Instructions

  1. Preparation: Bring pork chops to room temperature (30-45 min). Pat dry thoroughly. Combine salt, pepper, garlic powder, onion powder, and smoked paprika; season chops generously on all sides. Let chops rest for 10-15 minutes.
  2. Mixing: Whisk apple butter, apple cider vinegar, brown sugar, Dijon, Worcestershire, minced garlic, cinnamon, allspice, and red pepper flakes in a bowl; set aside. Dice onion and mince garlic for aromatics; measure out broth.
  3. Searing: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear pork chops 3-5 minutes per side until golden brown; remove and set aside.
  4. Sautéing: Reduce heat to medium. Add onion to skillet, scraping up browned bits (fond). Sauté 3-4 minutes until soft. Add garlic; cook 30-60 seconds until fragrant. Pour in broth, scraping remaining fond, and simmer briefly.
  5. Simmering: Pour prepared apple butter glaze into skillet. Bring to a gentle simmer, stirring, for 2-3 minutes until slightly thickened.
  6. Nestling: Return seared pork chops to skillet, nestling into glaze. Spoon glaze over chops. Cook 5-10 minutes, basting frequently, until desired doneness (e.g., 145-150°F for medium, 150-155°F for medium-well).
  7. Resting: Remove chops from skillet; tent with foil and let rest 5-10 minutes. While resting, simmer glaze to desired thickness and adjust seasoning.
  8. Final: Serve chops with a generous spooning of glaze, garnished with fresh parsley or sliced apples if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat.
