These delightful tarts combine buttery puff pastry with sweet fruit jam, evoking nostalgic memories and bringing joy to any gathering.

  • 2 sheets (14-16 oz total) all-butter puff pastry, thawed
  • 1 cup (250g) fruit jam or preserves (e.g., raspberry, apricot, strawberry)
  • 1 large egg
  • 1 tbsp water or milk
  • 1/4 cup powdered sugar (optional, for dusting)
  • 1/2 tsp lemon zest (optional, for jam)

Instructions

  1. Thaw puff pastry sheets according to package directions. Lightly flour your work surface and gently unfold one sheet of pastry.
  2. Gently roll out the pastry sheet to about 1/8 to 1/4 inch thickness. Using a 3-inch round cookie cutter, cut out circles. Place them on a baking sheet lined with parchment paper, leaving 1 inch between each. Gather and lightly re-roll scraps to cut additional circles. Repeat with the second pastry sheet.
  3. For each pastry circle, use a smaller 2-inch round cookie cutter to gently score an indentation in the center (do not cut all the way through). Pierce the center of each scored circle several times with a fork.
  4. In a small bowl, whisk 1 large egg with 1 tbsp water or milk. Lightly brush the outer border of each puff pastry circle with the egg wash, avoiding the pierced center.
  5. If using, stir 1/2 tsp lemon zest into 1 cup (250g) fruit jam. If your jam is very thick, gently warm it slightly to make it more spreadable, but avoid making it too runny.
  6. Spoon 1 to 1.5 teaspoons of the prepared jam into the center of each scored puff pastry circle. Be careful not to overfill.
  7. For a decorative touch, gently press the tines of a fork around the very outer edge of each tart.
  8. Preheat your oven to 400°F (200°C). Arrange the assembled tarts on parchment-lined baking sheets, ensuring at least an inch of space between them.
  9. Bake for approximately 12-18 minutes, or until the pastry is puffed, golden brown, and the jam is bubbling gently. Rotate baking sheets halfway through for even baking, if necessary.
  10. Carefully remove tarts from the oven and transfer them to a wire cooling rack using a thin spatula. Allow to cool for at least 20-30 minutes for the jam to set. Once cooled, optionally sift a light dusting of powdered sugar over them. Serve warm or at room temperature.

Notes

These tarts pair well with tea, coffee, or ice cream. Store leftovers in an airtight container for up to 3 days.
