Delightful combination of flavors in cheesy chicken enchiladas with a spicy jalapeño kick.

Ingredients

  • 2 cups shredded chicken
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños
  • 8 tortillas
  • 1 cup enchilada sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper until well combined.
  3. Spoon the chicken mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  4. Pour the enchilada sauce over the top of the rolled tortillas.
  5. Bake for 20-25 minutes or until heated through and bubbly.
  6. Garnish with chopped cilantro before serving.

Notes

If short on time, rotisserie chicken works beautifully. Feel free to swap in different cheeses or add black beans for added protein.
