Italian Sausage White Bean Soup

A comforting and hearty Italian sausage soup with white beans, perfect for chilly days.

Ingredients

  • 1 tablespoon (15ml) olive oil
  • 1 pound (450g) turkey sausage, casings removed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups (1.4 liters) vegetable broth
  • 2 cans (15 ounces each / 425g each) white beans, drained and rinsed
  • 1 can (14.5 ounces / 410g) diced tomatoes
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried basil
  • Salt and pepper to taste
  • 2 cups (60g) fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey sausage and cook until browned, breaking it into small pieces, about 5-7 minutes.
  3. Sauté onion, carrots, and celery in the pot until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Pour in vegetable broth, white beans, diced tomatoes, oregano, and basil. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes.
  7. Season with salt and pepper to taste, then stir in fresh spinach and cook until wilted, about 2 minutes.
  8. Serve hot, optionally garnished with grated Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Can be frozen for up to 3 months.
