  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder

  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Combine the ricotta cheese and granulated sugar in a mixing bowl. Mix until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the flour, baking powder, salt, lemon zest, and lemon juice until just combined.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 30-35 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
