  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat until it shimmers invitingly.
  2. Add the chopped onion and minced garlic. Sauté until fragrant, about 2-3 minutes.
  3. Toss in the cubed chicken and cook until browned, about 5-7 minutes.
  4. Stir in the chopped bell pepper and pineapple chunks, cooking for another 5 minutes.
  5. Add the cooked rice and soy sauce, mixing well.
  6. Season with salt and pepper to taste. Stir to combine.
  7. Cook for a few more minutes until everything is heated through.
  8. Garnish with sliced green onions before serving.

Notes

For a healthier option, substitute brown rice or quinoa. You can add seasonal vegetables for extra crunch.
