Delicious homemade bars combining tart cranberries with creamy frosting, perfect for holiday gatherings.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups dried cranberries
  • 1 cup white chocolate chips
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 12 tablespoons milk
  • 1/2 cup white chocolate for drizzle

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan for easy removal later.
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until fluffy.
  3. Add the eggs and vanilla extract, beating until well combined and smooth.
  4. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Fold in the dried cranberries and white chocolate chips.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean when inserted into the center.
  9. Let the bars cool completely in the pan before frosting.
  10. Beat the cream cheese until smooth, then gradually add the powdered sugar and milk to achieve desired consistency.
  11. Spread the cream cheese frosting over the cooled bars and drizzle melted white chocolate on top.
  12. Cut into squares, serve, and enjoy!

Notes

Store in an airtight container for up to 3 days at room temperature or in the refrigerator for up to a week. Can be frozen for up to 3 months.
