A delicious and comforting hot and sour soup packed with bold flavors and healthy ingredients.

Ingredients

  • 8 cups chicken or vegetable broth
  • 1 cup mushrooms, sliced
  • 1 cup bamboo shoots, julienned
  • 1 cup tofu, cubed
  • 1 cup carrots, shredded
  • 1/2 cup green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 teaspoons chili paste
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the broth to a boil.
  2. Add the mushrooms, bamboo shoots, tofu, and carrots. Cook for about 5 minutes until the vegetables are tender.
  3. Stir in the soy sauce, rice vinegar, and chili paste.
  4. Mix the cornstarch with a little water to create a slurry, then slowly add it to the soup, stirring continuously until thickened.
  5. Reduce heat and slowly drizzle in the beaten egg while stirring gently to create egg ribbons.
  6. Adjust seasoning with salt and pepper, and finish with chopped green onions.
  7. Serve hot.

Notes

For extra flavor, add garlic or ginger and mix in other veggies like bell peppers or spinach. Adjust the thickness by varying the cornstarch amount.
