Delightful cupcakes combining the sweetness of honey and peaches with rich cream cheese, perfect for summer gatherings.

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh peaches, diced
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup honey
  • 1 cup heavy cream
  • 1/4 cup additional honey for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, beat the butter and sugar together until creamy. Add the eggs one at a time, mixing well. Stir in the milk and vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  4. Fold in the diced peaches gently into the batter.
  5. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
  6. While the cupcakes cool, prepare the cream cheese filling by beating the softened cream cheese, powdered sugar, and honey until smooth.
  7. Once the cupcakes are cool, cut a small hole in the center of each and fill it with the cream cheese mixture.
  8. Whip the heavy cream until stiff peaks form, then frost the cupcakes with whipped cream. Drizzle with additional honey for decoration.
