  • 2 cloves garlic (minced)

  • 1 tablespoon cooking oil (vegetable or olive oil)
  • 1 cup cooked white or brown rice (cooled slightly)
  • 1/4 cup cilantro (chopped or parsley)
  • 1 tablespoon lime juice (for rice)
  • 2 ripe avocados (sliced)
  • 1 tablespoon lime juice (for avocado)

Instructions

  1. Seasoning the Chicken: Generously season the chicken breasts with salt and pepper on both sides. For those uneven breasts, gently pound them to an even thickness of about 1 inch.
  2. Making the Glaze: In a small bowl, whisk together the honey, 2 tablespoons of lime juice, lime zest, and minced garlic. Set aside.
  3. Heating the Skillet: Heat a large skillet over medium-high heat and add the oil.
  4. Cooking the Chicken: Once the oil is shimmering, add the chicken breasts. Cook for 6-7 minutes per side without moving them.
  5. Glazing the Chicken: During the last 2 minutes of cooking, brush the honey lime glaze over the chicken.
  6. Resting the Chicken: Remove the chicken from the heat and let it rest for 5 minutes before slicing into strips.
  7. Preparing the Cilantro Rice: In a medium bowl, combine the cooked rice with chopped cilantro and 1 tablespoon of lime juice. Season with salt to taste.
  8. Preparing the Avocados: Slice the avocados and toss them with 1 tablespoon of lime juice and a pinch of salt and pepper.
  9. Assembling the Stack: Press the seasoned rice mixture firmly into a round mold on your serving plate.
  10. Layering the Avocado: Layer the sliced avocado over the rice.
  11. Adding the Chicken: Top with the sliced honey lime chicken, arranging the pieces attractively.
  12. Final Touches: Carefully lift the mold straight up and drizzle any remaining honey lime glaze around the plate.
