A delightful blend of roasted sweet potatoes topped with creamy feta and drizzled with honey, these rounds are perfect for any occasion.

Ingredients

  • 2 medium sweet potatoes
  • 150g feta cheese
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wash and peel the sweet potatoes, then slice them into rounds about 1 cm thick.
  3. Toss the sweet potato rounds with olive oil, smoked paprika, salt, and pepper until well coated.
  4. Spread the sweet potato rounds in a single layer on a large baking sheet and roast in the oven for about 25-30 minutes, flipping halfway through.
  5. Crumble the feta cheese into a mixing bowl and add the honey, mixing until combined into a creamy paste.
  6. Remove sweet potatoes from the oven, allow to cool slightly, then top each round with a generous dollop of the feta-honey mixture and garnish with chopped parsley.

For optimal results, allow the sweet potatoes to cool slightly before adding the feta-honey mixture to preserve the distinct flavors.
