Sweet and slightly savory cookies that combine the rustic texture of cornbread with the delightful sweetness of honey.

Ingredients

  • 1/2 cup cold salted butter, cubed
  • 1/2 cup white sugar
  • 1/3 cup honey
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 1/2 cups bread flour
  • 1/2 cup yellow cornmeal
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup granulated sugar (for rolling dough balls)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the cold butter and white sugar until smooth.
  3. Add the honey, egg yolks, and vanilla extract; mix well.
  4. Whisk together the bread flour, cornmeal, baking soda, baking powder, and salt.
  5. Combine the dry mixture with the wet ingredients until just mixed.
  6. Shape the dough into tablespoon-sized balls.
  7. Coat each dough ball in granulated sugar.
  8. Place the coated dough balls on a baking sheet lined with parchment paper.
  9. Bake for 15 minutes, or until lightly golden.
  10. Cool on a rack before enjoying.

Notes

Store leftovers in an airtight container at room temperature for up to 5 days. You can also freeze the dough balls and bake them straight from the freezer.
