Crispy on the outside and fluffy on the inside, these homemade roast potatoes are the perfect comfort food for any occasion.

Ingredients

  • 2 lbs potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons dried herbs (like rosemary or thyme)
  • 2 cloves garlic (optional, minced)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into even-sized chunks.
  3. Bring salted water to a boil in a large pot and add the potato chunks. Let them simmer for about 10 minutes.
  4. Drain the potatoes and let them dry for a few minutes.
  5. Toss the potatoes with olive oil, salt, black pepper, and dried herbs (and minced garlic if using).
