Create fluffy, soft marshmallows that are perfect for hot chocolate and desserts.

Ingredients

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon pure vanilla extract
  • 2 packages (1/4 oz each) unflavored gelatin
  • 1/2 cup cold water
  • Powdered sugar for dusting

Instructions

  1. Combine ingredients in a saucepan: In a large saucepan, combine granulated sugar, corn syrup, and salt over medium heat. Stir until the sugar dissolves.
  2. Activate the gelatin: In a small bowl, sprinkle gelatin over cold water and let sit for about 5 minutes.
  3. Heat the sugar mixture: Once the sugar mixture reaches a boil, remove from heat and stir in the gelatin until dissolved.
  4. Beat into fluff: Transfer to a mixing bowl and beat on high speed for about 10-15 minutes until the mixture is thick and fluffy.
  5. Add flavor: Add vanilla extract and mix well.
  6. Pour and spread: Pour the mixture into a greased pan and spread evenly. Let it sit at room temperature for at least 4 hours or until set.
  7. Cut and dust: Cut into squares and dust with powdered sugar before serving.

Notes

Store marshmallows in an airtight container at room temperature for about a week. Avoid refrigeration.
