1 cup light corn syrup
1/4 teaspoon salt
1 tablespoon pure vanilla extract
2 packages (1/4 oz each) unflavored gelatin
1/2 cup cold water

Instructions
Combine ingredients in a saucepan: In a large saucepan, combine granulated sugar, corn syrup, and salt over medium heat. Stir until the sugar dissolves.
Activate the gelatin: In a small bowl, sprinkle gelatin over cold water and let sit for about 5 minutes.
Heat the sugar mixture: Once the sugar mixture reaches a boil, remove from heat and stir in the gelatin until dissolved.
Beat into fluff: Transfer to a mixing bowl and beat on high speed for about 10-15 minutes until the mixture is thick and fluffy.
Add flavor: Add vanilla extract and mix well.
