2 cups granulated sugar
1 cup light corn syrup
1/2 cup water
1 tablespoon gelatin
1/2 cup cold water
1 teaspoon vanilla extract

Instructions
Prepare the Baking Dish: Grease a 9×13 inch baking dish with oil or butter and dust it generously with powdered sugar.
Bloom the Gelatin: In a bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes.
Combine Sugar Ingredients: In a saucepan, combine the granulated sugar, corn syrup, and 1/2 cup of water. Cook over medium heat, stirring until the sugar is fully dissolved.
Heat to Soft-Ball Stage: Increase the heat and bring the mixture to a boil without stirring, monitoring until it reaches 240°F.
Mix in Gelatin: Remove from heat and stir in the bloomed gelatin until dissolved.
Infuse Flavor: Add the vanilla extract, stirring to combine.
Whip It Good: Using an electric mixer, whip the mixture on high speed for about 10 minutes until thick and fluffy.
