  • 1 cup Sugar
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt

Instructions

  1. Prepare the cherries: Pit and chop the fresh cherries, saving any juice that runs off.
  2. Combine in a saucepan over medium heat the cherries, sugar, and lemon juice.
  3. Create a slurry by mixing cornstarch with a little water in a small bowl, then add it to the saucepan.
  4. Stir continuously until the mixture thickens and becomes glossy.
  5. Remove from heat, add the vanilla extract and salt.
  6. Let cool before using in pies or other desserts.
