Delicious homemade energy bars that combine health and indulgence with a balance of crunchy and chewy textures.

  • 1 cup puffed quinoa
  • 1/2 cup natural nut butter (such as almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1/2 cup oats
  • 1/4 teaspoon salt

Instructions

  1. Combine the base ingredients: In a large bowl, combine puffed quinoa, oats, and salt. Give them a good stir, ensuring that the ingredients are well mixed.
  2. Melt the nut butter and sweetener: In a small saucepan, heat the nut butter and honey or maple syrup over low heat until they are melted and combined.
  3. Coat the quinoa mixture: Pour the nut butter mixture over the quinoa mixture and stir until everything is well coated.
  4. Add chocolate chips: Fold in the dark chocolate chips until they create little pockets of chocolatey joy in your bars.
  5. Press and chill: Press the mixture into a lined baking dish, making sure it’s packed tightly, then refrigerate for at least an hour to set.
  6. Cut and enjoy: Once set, cut into bars and enjoy!
