Creamy and rich yogurt bites packed with protein, perfect for a healthy snack or post-workout treat.

Ingredients

Scale
  • 1/2 cup Full-Fat Greek Yogurt
  • 1/4 cup Powdered Peanut Butter
  • 1 tablespoon Creamy Peanut Butter
  • 1/2 tablespoon Maple Syrup
  • 1/2 cup Dark Chocolate Chips
  • 1 teaspoon Coconut Oil
  • Flaky Sea Salt (optional)

Instructions

  1. Prepare Your Pan: Line an 8×8 inch baking dish or small loaf pan with parchment paper, ensuring it overhangs on all sides for easy removal.
  2. Combine Your Yogurt Base: In a medium bowl, combine Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Stir until the mixture is completely smooth and uniform.
  3. Spread the Yogurt Layer: Spoon the yogurt mixture into the prepared pan and spread it into an even layer using a spatula.
  4. Melt the Chocolate Topping: In a separate microwave-safe bowl, melt dark chocolate chips with coconut oil until smooth. Pour and spread the melted chocolate evenly over the yogurt layer. Sprinkle with flaky sea salt, if desired.
  5. Freeze the Mixture: Carefully transfer the pan to the freezer. Freeze for a minimum of 3-4 hours, or ideally overnight, until the mixture is completely solid and firm.
  6. Cut and Serve: Once frozen, use the parchment paper overhangs to lift the entire block onto a cutting board. Using a hot, sharp knife, cut into 16-20 uniform bites. Serve immediately for a refreshing, protein-packed snack.
  7. Store Any Leftovers: Store leftover High Protein Peanut Butter Yogurt Bites in an airtight freezer-safe container with parchment paper between layers to prevent sticking. They will keep in the freezer for up to 2-3 weeks.

Notes

Ensure to use high-quality dark chocolate for better flavor. You can adjust sweetness by modifying the maple syrup amount.
