Nutritious and easy-to-make egg bites packed with protein, perfect for busy mornings or lazy brunches.

Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup fresh spinach, chopped
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  2. Whisk together the eggs, cottage cheese, and a pinch of salt and pepper in a large mixing bowl.
  3. Stir in the chopped spinach and diced bell pepper until evenly distributed.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin. Serve warm or store in the refrigerator for quick breakfasts or snacks.

Notes

Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months. Reheat in the microwave for about 30 seconds.
