High-Protein Cottage Cheese Lava Cake

A rich, indulgent molten chocolate cake with a healthy twist, packed with protein from cottage cheese.

Ingredients

  • 1 cup low-fat cottage cheese (240g)
  • 2 large eggs
  • 1/4 cup cocoa powder (30g)
  • 1/4 cup granulated sweetener (50g)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease ramekins.
  2. Blend the cottage cheese and eggs until smooth.
  3. Mix in cocoa powder, sweetener, vanilla, baking powder, and salt.
  4. Fold in dark chocolate chips if desired.
  5. Pour the batter into the ramekins, leaving space at the top.
  6. Bake for about 20-25 minutes until edges are firm and center is soft.
  7. Cool for a few minutes before removing from ramekins.
  8. Flip onto a plate and serve warm.

Notes

Pair with Greek yogurt or vanilla ice cream. Can store in the fridge for up to three days.
