  • High-protein tortillas (whole wheat or high-fiber/low-carb)
  • ¼ cup shredded cheese (Monterey Jack and cheddar blend)
  • Optional add-ins: finely diced bell peppers, corn, or spinach

Instructions

  1. Prepare Your Chicken Filling: In a medium bowl, combine cooked shredded chicken and ranch seasoning mix or light ranch dressing. Mix until chicken is evenly coated.
  2. Heat Your Pan: Warm a large non-stick skillet over medium heat, adding cooking spray or a small pat of butter.
  3. Assemble Your First Quesadilla: On one half of a tortilla in the pan, spread about ½ cup of the chicken mixture and sprinkle with shredded cheese.
