A cozy, high-protein broccoli cheddar soup that combines rich flavors and wholesome ingredients, perfect for warming up on a chilly day.

Ingredients

  • 1 tablespoon butter
  • 1 large yellow onion, diced
  • 2 large carrots, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 3 cups vegetable broth
  • 4 cups chopped broccoli
  • 2 cups 1% milk
  • 4 oz shredded cheddar cheese
  • 1 cup blended low-fat cottage cheese
  • Salt & pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion, carrot, and celery; sauté for about 10 minutes until softened.
  2. Stir in garlic and cook for another minute. Add smoked paprika and flour; stir well to combine.
  3. Pour in vegetable broth and add chopped broccoli. Bring to a simmer and cook until broccoli is tender, about 8–9 minutes.
  4. Lower the heat and gently stir in milk. Add both cheeses until melted, stirring continuously for a smooth and creamy mixture.
  5. Blend one cup of the soup until smooth using an immersion blender, then return it to the pot.
  6. Season your soup with salt and pepper to taste before serving warm in bowls.

Notes

For a richer flavor, allow the soup to sit for a few hours or overnight before serving. Store leftovers in the fridge for up to three days or freeze for up to three months.
