  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon vanilla extract
  • 1 1/2 teaspoons baking powder

  • Pastel colored frosting
  • Decorative items (edible eyes, fondant, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the milk and vanilla extract, mixing well.
  4. Combine the flour, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fill the cupcake liners about 2/3 full with batter.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the cupcakes completely before frosting.
  8. Decorate with pastel colored frosting and use decorative items to create Hello Kitty designs.

Notes
