Creamy cheesecake bars with a bright lemon zing, perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 cup lemon curd (store-bought or homemade)
  • Whipped cream and lemon slices for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a greased 9×13 inch baking dish.
  3. Beat the softened cream cheese and 1 cup sugar together until smooth.
  4. Slowly add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, lemon juice, and lemon zest until combined.
  6. Pour the cheesecake batter over the prepared crust and spread it evenly.
  7. Bake for 30-35 minutes or until set but still slightly jiggly in the center.
  8. Remove from the oven and let cool. Refrigerate for at least 2 hours or until chilled.
  9. Spread a layer of lemon curd over the top.
  10. Slice into bars and serve with whipped cream and lemon slices if desired.

Notes

For easy cleanup, line your baking dish with parchment paper. Soften cream cheese fully for a smooth batter. Store-bought lemon curd is a time-saver.
